The
flock is run on our smallholding on the West Wales coast at the
southern end of Cardigan Bay, and there we aim to produce flavoursome
and ethically-reared free-range meat with minimal intervention from
chemicals, drugs and growth promoters.
Our closed flock of Lleyn-Welsh Mule crosses is non-intensively raised
and allowed to mature on natural pasture as nature intended, giving
lean but succulent quality mutton which is as tasty as a stand-alone
roast as it is in a casserole or tagine.
Our
ewes are excellent mothers who turn out chunky, well fleshed lambs,
which mature naturally on grass into tasty, yet tender mutton. We
also slaughter some of our flock earlier as hogget and lamb.
Like
many other small producers, we began producing a wide range of
vegetables, jams, chutneys, sauces, breads, free range eggs and lamb
for ourselves in the spirit of self-sufficiency. But as neighbours,
family and friends began to taste our produce and asked whether we
could supply them too, we started to realise that we could share this
with others - hence Heolas Fawr Mutton, Hogget and Lamb.
